If a player gets a season ending injury in like training camp or spring training and is put in the IR or DL for the season, does it still count as a year on the contract?

Yes, I believe it counts as a year on the contract. He also is normally paid his full salary for that year as well, unless he pulls a "Kellen Winslow" and gets hurt riding a motorcycle, or some stupid stuff like that.
