The logic behind Saban's decision is probably based on four primary factors:
1. He's being offered a heckuva lot of money to join Alabama. This despite the fact that his results in Miami have been iffy the last couple of years. Both of his Dolphins teams have started slow and effectively ruined their season by the midway point. What happened after that is just a nice story, but it doesn't mean anything right now.
2. He's very much in danger of having another bad season in Miami next year. The Dolphins are not going to get a top 5 pick and an instant bailout the way that the Jets and Saints did this year. If he has another bad season his ability to command a very strong offer from a fabled program like Alabama will diminish substantially.
3. The Dolphins are about to go into total rebuild mode. The defensive front 7 is very strong and with the exception of Channing Crowder it's also either over the hill or on the peak waiting to start down. No other unit on the team with the possible exception of the runningbacks is above NFL average right now and aging is not confined to the defensive front 7, the offensive line is also looking very 29-30ish.
4. The Dolphins still have no QB they can count on moving forward at this point. Daunte Culpepper may or may not be able to come back and play at an acceptable level. He almost certainly is not going to be playing at his peak level of 3 years ago even if he can play. QB is the most important position on an NFL roster and the Dolphins don't have one.
Everything considered the odds are very strong that the Dolphins are going to be a bad place to have on your resume from 2007-2009. Saban absolutely has to take the Alabama offer or he's going to be gambling heavily with his professional reputation and future career choices. Alabama will cause a minor hit now to his rep, but the Dolphins over the next 3 years could get him absolutely obliterated.
