I hear about the silent crowd this way the crowd noise won't mess with the snap count as much, but idk how this works, Does anyone know that can explain it?

If your disiplined in a quiet stadium you want to go to normal count so you can use your voice to try and draw a defense offside

Correct me if I'm wrong, but I think he was explaining that Peyton (QB) would pat the Center on the Leg. The center would then snap the ball immediately after picking his(center) head up.
He then said the rest of the line would move when the Center picked his head up.
I'm pretty sure this is exactly how he explained it. Like I said, if anyone knows or heard better, feel free to correct
