In reality it is suspect that the refs never logged the pressure if that's supposed to be done.

This is like a merry-go-round.
I don't know if logging the pressure is a requirement or just an option. But what does logging guarantee you? Nothing. Because even if they would have written down the pressure then people like you or the NFL dude would say "they probably cheated writing the numbers down because they hate the Patriots".

We know that part or all of the requirement is checking the pressure and marking the football. That has been done.

Not only that but it would have also been proof that they actually put a pressure gauge in those balls. The latest reports from un-named nfl sources
are now saying that 1 of the 11 balls was under by 2 psi with the other 10 just a tick under 12.5 psi. Also the ball boy on the "smoking gun" tape visiting the restroom for 98 sec. was an elderly man.

Maybe the NFL should have referees actually control the balls used and take away the idiotic policy of teams dealing with it

How would we know that they checked the pressure if they would have written the numbers down?
Your argument "how would we know" is absurd.

We never would know unless you have observers in the room who then confirm the pressure check. But even then "how would we know". Maybe the observers are in the fix.
Let's make tapes of the pressure checking. That would be great proof. But then again we know how careful the NFL handles tapes and recordings implicating the Patriots, so these tapes mostlikely would be gone. Question is: how would we know?

And I say: welcome to the NFL and its cool aid. You drank a 55 gallon drum of it. The "how would we know" is the game the NFL is playing.

That's what proves it right there. We all know it takes an old man a lot longer than 98 seconds to actually go to the bathroom. :)
