When is the date for the first round of roster cuts? I thought it was June 1.

Sept. 1 -- Roster cutdown to maximum of 75 players.
June 1st used to be a key date on the NFL calendar, because the cap hit of players cut on or after June 1st could be split between this season and next. With no cap next year, June 1st is irrelavant.
EDIT: Apparently June 1st isn't irrelavant....but it is for cutting players:
June 1 -- Deadline for old clubs to send tender to unsigned unrestricted free agents to receive exclusive negotiating rights for rest of season if player is not signed by another club by July 22. Deadline for old clubs to send tender to unsigned restricted free agents or to extend qualifying offer to retain exclusive negotiating rights.
That was the traditional day for teams who wanted to get rid of fat contracts...there's so few teams now that are close to the cap that it's not a problem anymore and teams don't have to cut players like they once did.. So you're not seeing any major names...but if a team think they have a replacement for someone, you may see a few cuts the next few days.
