So do you watch from the stadium seats on the huge screen or how does it work?

No usually watch from inside the club level of the stadium. There are drinks and food, and the radio stations have a booth set up, player autographs and cheerleader's and of course multiple TV's with the draft on. The best part is talking to and with other fans though IMO.
