I played football a few years as a kid. But I played defense. Just how many plays are in a teams Offensive playbook?
How many are used in a game?

A playbook can have 100s of plays. Most weeks you see teams pick specific sets/concepts as part of their game plan. So they may highlight dozens of plays for the week and go into the week focused on those.

the best teams, (chiefs) are so practiced they can sprinkle in plays that don’t get practiced very often.

Most NFL teams have anywhere from 200 to 250 plays in their playbook. Most weeks they game plan the offense around 75-100 passing plays and 15-25 running plays. I assume the passing and running plays will change weekly based on the defense the offense will be going against each week.

Wow that's a lot of plays to remember.
Do college teams have that many?

Although i think Playbooks vary on team, their qb knowledge, and their team they are preparing for, im pretty sure its all about how well they can execute them. The teams that can execute well are the ones that can show up gameday with only a number of plays. Sorry OP I know that didnt answer the number of plays question
