What is this position?
What are the responsibilities? Is it a starting spot for young future coaches?

I think you are right that it is an entry level position for young coaches to get their feet wet in an organization.

I imagine it is a glorified "gofer" type gig where you help the offensive staff in various ways.

Doing a lot of the grunt work and tedious stuff that coaches don't have time for.
